Abgedeckt an einem warmen Ort ca. 40 Minuten gehen lassen, dann \u00fcber Nacht ebenfalls abgedeckt f\u00fcr ca. 12 Stunden in den K\u00fchlschrank stellen.<\/strong><\/li><\/ol><p><strong>\u00a0<\/strong><\/p><ol start=\"2\"><li><strong>Am n\u00e4chsten Tag Teig kurz Raumtemperatur annehmen lassen. Ein Blech mit Backpapier belegen.<\/strong><\/li><\/ol><p><strong>\u00a0<\/strong><\/p><ol start=\"3\"><li><strong>Den Teig auf eine leicht bemehlte Arbeitsfl\u00e4che geben und, am besten mit einer Teigkarte, ca. 10 Br\u00f6tchen abstechen. Br\u00f6tchen mit der hohlen Hand \u00fcber dem Teigling rund und straff schleifen. Der Teig sollte nicht mehr stark geknetet werden. Br\u00f6tchen mit Abstand zueinander aufs Blech und nochmal abgedeckt ca. 20 Minuten gehen lassen.<\/strong><\/li><\/ol><p><strong>\u00a0<\/strong><\/p><ol start=\"4\"><li><strong>Den Backofen auf 240 Grad Hydrobacken vorheizen und eine kleine Schale mit Wasser auf den Boden des Ofens stellen. Die Teiglinge mit einem scharfen und gro\u00dfen, leicht einge\u00f6lten Messer l\u00e4ngs einschneiden. Mit etwas Wasser bespr\u00fchen.<\/strong><\/li><\/ol><p><strong>\u00a0<\/strong><\/p><ol start=\"5\"><li><strong>Br\u00f6tchen zun\u00e4chst 10 Minuten bei 240 Grad backen, dann auf 220 Grad herunterschalten, nochmal mit Wasser bespr\u00fchen und weitere ca. 10 Minuten backen.
